Peter Pollay
Co Owner, Executive Chef Posana
A graduate of The Culinary Institute of America, Executive Chef Peter Pollay has over 20 years of experience working in kitchens for Wolfgang Puck at Granita and Spago Chicago, David Burke at Park Avenue Café, Waldy Malouf’s Hudson River Club, and Larry Levy. His philosophy of sourcing premium ingredients, working with the local farming community, and never taking shortcuts can be sample at any of our restaurants. When he’s not in the kitchen, Peter enjoys gathering for a family meal, cheering his kids on at soccer games, and traveling with his family.

Brian Crow
Executive Chef Chestnut
Recognized as a “culinary game-changer” in Zagat Magazine and as one of the “top 30 chefs under 30” during his time in Colorado. While at culinary school, Brian started working at The Corner Kitchen where he developed a greater measure of culinary expression. It was there that he cooked for the former President and First Lady of the U.S. Barack and Michelle Obama. After culinary school, he landed a sous chef position at Asheville’s renowned Grove Park Inn. In 2011, Brian became the Executive Chef at Devil’s Food Bakery & Cookery in Denver at only 24 years of age. Brian returned to North Carolina to become Chestnut’s Executive Chef in 2017.

Hector Diaz
Executive Chef, Salsas, Modesto, Bomba
Since the early 1990s Diaz has been an influence and investor in Asheville’s thriving culinary scene. His restaurants showcase a multicultural influence, combining ingredients from local farmers and purveyors with recipes from family and travels. Whether you’re a visitor or an Asheville local, if you love this town’s food scene, you owe a nod and wink to Hector. So many restaurants and avenues lead back to him, and the rims of many of your favorite dishes hold his thumbprints.

Lee's One Fortune Farm
Lee's One Fortune Farm is a multi-generational, family farm in Marion, North Carolina. Everything the Lees produce is produced with traditional natural growing practices & all natural composts. Lee's One Fortune Farm specializes in traditional foods from Southeast Asia including sweet sticky rice, purple rice & red rice, Asian greens, and fruit. In addition to growing an abundance of food, the Lees work to preserve and teach traditional Hmong methods of producing food sustainably. They also regularly donate produce to Bounty & Soul.

Root Cause Farm
Root Cause Farm is a non-profit organization in Fairview that has been a partner of Bounty & Soul for many years. The farm is growing community solutions to hunger and working towards a just, equitable, and resilient food system where all types of hunger are nourished. They use food as a tool for connection and action, growing organic produce on one acre and distributing it on the farm, to a food pantry in Fairview, and to other partner organizations such as Bounty & Soul. We also partner with them to provide engagement opportunities and gardening education for our community.

Tierra Fértil Coop
Tierra Fértil Coop is a social and economic initiative started in the midst of the COVID-19 pandemic in 2020 by seven Hispanic community members living in Henderson County, North Carolina. The Coop stemmed from a collective dream to promote access to resources and build capacity to produce food, and as result stimulate food justice and racial equity in the local food and agricultural system. Their organic farm promotes abundance, health, nutrition, education, inclusion, and fair and equitable relationships between the environment and our community. Through our partnership with Tierra Fértil Coop, we are able to diversify our offerings and provide our LatinX community members with culturally appropriate food.

Paula Hanke & Hank Bones
Paula Hanke and Hank Bones have recently partnered as a duo- playing 60 and 70's harmony-driven favorites and originals, while also appearing around Asheville and beyond with multiple musical projects. Hanke tours with Love Is A Rose: Celebrating the Music of Linda Ronstadt, local dance band- 'In The Pocket', and the harmony driven trio 'Love Bubble' along with Bones and Peggy Ratusz. Bones is master on guitar, arranging and songwriting, and can be seen in venues all over downtown Asheville any day of the week in various collaborations, including The John Henry's, and the 3 Cool Cats.
