Brown Rice & Bean Salad

This oil-free, low fat salad is high in taste, fiber, protein, vitamins, and minerals and perfect for your next barbecue, picnic or potluck. Best of all it doesn’t go bad in the heat because its whole-plant based!

Ingredients

  • 3 cups brown rice or any type that’s not sticky
  • 1 can 15.5 oz black beans rinsed and drained
  • 1 can 15.5 oz kidney or pinto beans rinsed and drained
  • 1 can 14.5 oz corn drained or 1 cup frozen (cooked, drained and cooled)
  • 1/2 medium red onion chopped
  • 1/2 red or green bell pepper chopped
  • 1/2 cup salsa or more to taste
  • 1/2 cup apple cider vinegar can substitute red wine vinegar
  • 1 tsp. cumin
  • 1 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • optional 1/4 cup chopped cilantro or to taste
  • optional 1/8 tsp. of any hot sauce or seasoning or to taste
  • optional juice of 1 fresh-squeezed lime or to taste
  • optional soft corn tortillas oil-free or lettuce boats for serving

Instructions

  • Combine all ingredients in a large bowl and stir to combine thoroughly.
  • Serve and enjoy!

Notes

How to serve it:
  1. Upon serving (not added to the mix and stored in the fridge), consider adding diced avocado, diced tomatoes and an additional tablespoon chopped cilantro for each serving.
  2. For lunch: Serve warm or cold in a bowl with any toppings above.
  3. For snack: Scoop it up with chips as is, or top guacamole with 1/2 cup (drained) of this salad.
  4. For dinner: Warm up a serving or two and lay down (burrito-style) on a soft wrap or crispy tostada or taco shell along with some grilled or sauteed sliced onions and peppers.
  5. Anytime: Top a green leaf salad and add extra dressing to make an entree salad.
  6. Make extra dressing for a salad: 1/2 cup apple cider vinegar and 3 tbsp. (or more) of salsa or picante sauce and 1/8 tsp. of sriracha or hot sauce and salt and pepper to taste. Shake it up in a jar or whisk in a bowl.
  7. Lasts 7 days in the fridge.
