Carrot, Spinach and Lentil Soup

Ingredients

  • 1 tablespoon coconut oil
  • 1 small red onion, diced
  • 2 cups of carrots, diced
  • 3 cloves of garlic, minced
  • 1 32- ounce container of vegetable broth
  • 2 cups of filtered water
  • 4 cups of spinach, chopped
  • 2 ½ cups of cooked lentils
  • 1 tablespoon of fresh rosemary, minced or ½ teaspoon dried
  • 3 teaspoons of salt (adjust based on your dietary needs)
  • Pepper to taste

Instructions

  • Heat the oil in a stock pot on medium heat.
  • When the oil is hot add the onion and carrots.
  • Sauté for 5 minutes, stirring occasionally.
  • Stir in the garlic and cook for one minute.
  • Add the broth, water, spinach lentils, rosemary, salt (you can add as much or as little as you like based on your dietary needs), and pepper.
  • Bring to a boil and lower the heat to simmer.
  • Cook for 25-30 minutes or until the carrots are soft, but not mushy.
