Chocolate Mousse

Total time: 5 mins, Servings: 2-3

INGREDIENTS

  • 1/4 cup pure maple syrup or other natural sweetener 
  • ½  teaspoon vanilla extract
  • ¼  cup mashed avocado (about 1-2 avocados)
  • 6 tablespoons cacao powder or unsweetened cocoa powder
  • ¼  cup unsweetened nut milk

Optional toppings: Berries, shredded coconut, almonds, granola


INSTRUCTIONS

  1. Add maple syrup and vanilla extract to blender.
  2. Add mashed avocado and cocoa powder and process until creamy, stopping to scrape down the sides of the bowl with a spatula if needed.
  3. Add the nut milk  and process until smooth.
  4. Serve at room temperature or chilled. Store in a sealed container in the refrigerator up to 3 days or in the freezer up to 2 weeks.
  5. Top with shredded coconut, berries, granola
