Vegetarian Winter Stew(made by Asheville Pro Kitchen)

INGREDIENTS

  • 3 medium carrots, diced
  • 1 onion, diced
  • 3 stalks celery, diced
  • 3 cloves of garlic, minced
  • 16 oz mushrooms, chopped
  • 4 tomatoes, diced
  • 2 tablespoons smoked paprika
  • 3 sweet potatoes, diced(or golden potatoes)
  • 2 cups leafy green of choice
  • 1 box quick barley
  • 3 tablespoons miso paste
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 2-3 tablespoons fresh thyme
  • 1-2 bay leaves
  • 4 tablespoons flour
  • 1 cup red wine
  • Salt and pepper to taste

INSTRUCTIONS

  1. Add olive oil to saucepan over medium heat.
  2. Once heated, add carrots, onion, celery, mushrooms, garlic, smoked paprika and thyme and saute 3-5 min. Add flour and cook another minute. Then add red wine and reduce by half(or simmer for 5 min. .
  3. Add tomatoes, sweet potatoes, miso paste, barley, bay leaf and vegetable broth and simmer 20-30 minutes, remove from heat then add chopped leafy greens. Cook until leafy greens wilt(2-3min). 
  4. Add salt and pepper to taste and enjoy!
