Preheat oven to 350 degrees and grease mini muffin tin with olive oil or choice of cooking spray.
In a medium bowl, mix together the warm quinoa with the shredded cheese to melt the cheese. Add the eggs, garlic, salt, pepper, oregano and veggies, Mix to combine.
Spoon into mini muffin tin, filling each to the top. Bake for 20 minutes.
Remove from the oven and let cool for 10 minutes. Run a knife around the edges to loosen and then pop out and enjoy!
