Peel rutabagas.
In a large bowl, shave rutabagas and carrots into thin strips using a veggie peeler, cheese grater, or knife.
Add optional veggies if using (burdock root, onion, or radish) to bowl.
In a separate bowl, whisk together liquid ingredients until well combined.
Add optional liquid ingredients if using (honey and horseradish) and whisk to combine.
Toss the vegetables in the sauce and allow to absorb flavors in the fridge for at least 10 minutes.
