Skip this step if you are following a plant-based diet: Whisk eggs and egg whites, season with salt and pepper. In a hot wok or skillet, spray a little oil and cook the eggs. When cooked, remove from pan and set aside.
Let the wok or skillet get really hot. Add oil or veggie broth and cook onions, scallion whites, carrots, garlic and fresh ginger for about 30-60 seconds, careful not to burn.
Add in other veggies such as peppers, snow peas, squash, etc.
Add brown rice and stir well a few minutes to heat through.
Optional: Add cooked egg.
Add soy sauce, scallion greens and edamame, and mix well for about 3-4 minutes.
Serve and enjoy!
