Preheat your oven to 375 degrees.
Cut Squash horizontally to create two halves.
Spray a baking sheet then lay the squash flesh down and bake for 30 minutes or until tender.
While it’s baking, add onion and celery to the skillet with a small amount of water for about 5 minutes.
Add salt and pepper to taste.
In a large bowl, toss the apple with lemon juice. Add quinoa. Pecans, raisins, sage, and sauteed celery and onions.
Pull the squash out of the oven, flip over and fill with quinoa stuffing.
Cover with foil and bake for another 30-45 minutes, or until flesh is soft in the center.
