A savory and flavorful breakfast full of nutritious plant-based ingredients
- 1 cup of chopped onion
- 2 cloves garlic
- 2 cups chopped/peeled sweet potatoes
- 2 teaspoons chilli powder
- 1 teaspoon cumin
- ⅓ cup low sodium vegetable broth
- 1 cup cooked black beans
Optional
- Nutritional Yeast
- 1 cup leafy greens kale, spinach, chard, collards, turnip or beet greens. Splash of hot sauce. Chopped cilantro for garnish.

Place onions in a non stick skillet stirring occasionally for 3 minutes.
Add garlic and stir.
Add the sweet potatoes and chilli powder and stir to coat the vegetables.
Add broth and stir.
Cook for about 12 minutes stirring occasionally. Until potatoes are cooked through.
Add black beans and salt cook for about 2 more minutes.
Add the hot sauce and cilantro and serve.
