Preheat the oven to 300 F. Mix kale and oil in a large bowl. Use hands to massage oil into kale.
Add cashews, sunflower seeds, 1.5 tbsp nutritional yeast, salt and pepper, and cayenne pepper (optional) into the blender or food processor until it is a fine meal consistency.
Work spice mixture into the kale. Place kale on a baking sheet (not overlapping).
Add remaining 1 tbsp nutritional yeast to kale. Bake for 15 minutes, flip kale, return to the oven for an additional 5 minutes. Enjoy!
Can place leftover kale into a closed container or zipped bag for 2-3 days.
Notes
Kale is packed with Vitamin K (a vitamin beneficial to blood health.) It also contains fiber which is beneficial to gut health!
