15 oz can black beans
drained and rinsed

15 oz can diced tomatoes
(can use fresh)

cumin
or to taste

garlic diced or 1/2 tsp jarred diced garlic
Fresh cilantro leaves
to taste
Flour / wheat tortillas, corn chips, OR lightly toasted sweet potato shells.
You can also opt for using lettuce wraps for extra freshens!
Optional Add-Ins:
Brown rice, quinoa, or lentils

Avocado
Nutritional yeast
Green onions

Salsa / Pico de Gallo

Instructions
Place all but the tortillas, chips or sweet potato shells in a sauce pan.
Cook until the liquid in beans and canned tomatoes reduced enough to be used as a taco or enchilada filling.
