Eggplant Almond Chips
Ingredients

eggplant
peeled
1/4
cup
almond meal
ground almonds
2
tablespoons
nutritional yeast
2
teaspoons
garlic powder
1
teaspoon
onion powder
1
dash
black pepper
1-2
teaspoons
olive oil or a small amount of olive oil spray
Instructions
Preheat oven to 375 degrees F.
Cut eggplant into thin (1/4" thick) bite-size pieces.
In a mixing bowl, combine almond meal, nutritional yeast, garlic powder, onion powder and pepper.
Lightly brush or spray eggplant pieces with olive oil and coat in almond mixture.
Bake for 15 minutes, flip, then bake for an additional 10 to 15 minutes or until crisp and lightly browned.
