1/3cupolive oil or avocado oilor opt out of the oil and try roasting without for a more heart-healthy option
1tbspbalsamic vinegar

Instructions
Preheat oven to 425 degrees. Place all vegetables into a clean mixing bowl and other ingredients.
Toss to coat, and lay out all vegetables onto a sheet pan.
Roast for 30-35 mins. Serve warm and enjoy!
Notes
Potatoes are high in potassium and a great source of fiber (especially with the skin left on). Leeks are an excellent source of Vitamin A, K, and C making it an antioxidant and great for your bone health!
