Pineapple Salsa with Black Beans and Corn (by Lyric)
This salsa can be made raw or cooked.
Ingredients
½
cup
diced onion
2
cloves
garlic
½
cup
diced pineapple
½
cup
diced or canned tomato
1
bell pepper cut into strips
1
can
black beans rinsed
optional
1
can
corn kernels (rinsed)
1
tablespoon
cumin
½
tablespoon
chili powder
Salt & Pepper to taste
¼
cup
cilantro
1
lime, juiced
Optional:
jalapeno, avocado, nutritional yeast
Wrap in hydroponic lettuce romaine lettuce or cabbage.
Instructions
Raw version:
Simply add all ingredients to a bowl and mix!
Cooked version:
Saute garlic and onion on a skillet. Once onions become translucent (3-5 minutes) add pineapple and bell pepper. Cook for another 5-7 minutes.
Lastly, add black beans. Mix in spices.
Top with cilantro, lime juice, and diced tomato.
Serve in a lettuce wrap.
