Roasted Tomato Pesto
Ingredients

cup
tomato
chopped
1
teaspoon
extra virgin olive oil
¼
cup
sliced almonds
can sub with sunflower seeds, sesame seeds, or chickpeas
½
cup
chopped basil
3
cloves
garlic
Salt to taste
Instructions
Roast chopped tomatoes on 350 degrees for 20 minutes (drizzle optional olive oil)
Put all ingredients into a blender and blend! Taste and add more for desired flavor / consistency!
Serve with spaghetti squash, whole grain pasta, roasted veggies, spread on a sandwich, and more!
