A nutrient dense addition to any meal, or a quick sweet potato snack, these little bites are perfect for fall weather
Ingredients
1-2sweet potatoespeeled and cut into 1 ½ inch cubes (1 large sweet potato or 2 small) or white potatoes
2tablespoonsof plant milkalmond, oat, etc
1cupkalechopped & de stemmed
½yellow oniondiced
1teaspoongarlic powderor 2 cloves garlic
1teaspoonparsley
1teaspoonoregano
Salt and pepperto taste
Optional:
hemp seeds or bread crumbsyou can make your own by using stale bread / toasting your bread and crumbling it
Instructions
Preheat oven to 400 degrees F and line a baking sheet with parchment paper or grease with coconut oil. Bake for approximately 20 minutes. Makes approx. 12.
Steam or boil sweet potatoes until tender. Transfer to a large bowl and mash.
Add milk, kale, onion, and seasonings to mashed sweet potatoes and mix until well combined.
Wet your hands and begin shaping the potato mixture into equally shaped balls. Place balls on baking sheet and sprinkle with hemp seeds or bread crumbs (optional.)
Bake for approximately 20 minutes. Makes approx. 12.
