For the Crust
9graham crackers
¼cuppacked light brown sugar
5tablespoonscoconut oil, melted
Instructions
To Make the Crust
Use a food processor or blender to pulse the graham crackers into a fine crumb or your desired texture.
Add crumbs to a bowl along with brown sugar and melted coconut oil. Mix until combined.
Place the crumb mixture into a pie plate. Use the bottom of a glass to firmly press the crumbs into the pie plate evenly. When complete, cover the crust and place in the refrigerator for at least one hour to allow it to set.
To Make the Filling
Add tofu, 8-10 strawberries, and the honey or other natural sweetener into a food processor or blender. Blend until smooth or add a few extra strawberries and pulse to create chunks instead.
Taste the filling to determine sweetness before placing into the pie crust.
Pour the filling into the prepared pie crust. Cover and refrigerate for at least 1 hour.
Optional: To Decorate Top
Thinly slice additional strawberries or fruit and place on top of refrigerated prepared pie.
