Prepare this tasty dish as side or make extra sauce and top a salad with the warm green beans.
- 1 small onion, chopped
- 1-2 cloves garlic, minced
- 1 lb green beans, chopped in half
Sauce:
- 2 tablespoons nut butter
- 2 tablespoons tamari or soy sauce
- 3 tablespoons rice vinegar
- 2 tablespoons sesame oil or veggie broth
- 1 tablespoon agave, local honey, or pure maple syrup
- Juice of 2 limes
- 3 cloves garlic minced
- Optional Toppings: lime, jalapeno, peanuts,
Optional Salad Ingredients:
- Bell pepper and/or summer squash, cut into thin strips
- Romaine lettuce or greens of choice
- Scallions, cilantro, sesame seeds
Add all sauce ingredients together and whisk, blend, or shake in a mason jar.
Saute onion and garlic with veggie broth, water or olive oil until onion becomes translucent.
Add green beans (and any other veggie of choice). Cook for 5-7 minutes.
If making a salad, prepare chopped ingredients such as bell pepper, squash, lettuce, etc. and place warm green beans on top. Add more sauce or your favorite Thai salad dressing.
Enjoy and sprinkle on any additional toppings!
