Preheat oven to 300 degree F.
Line a large baking sheet with parchment paper.
Place the peanut butter, honey/maple syrup, vanilla, sea salt, and ½ cup water in a blender. Process until smooth and creamy.
Place the oats in a large bowl and pour the peanut butter mixture over them. Mix until the oats are well coated. Spread the mixture evenly over the parchment lined baking sheet
Bake until the oats are dry to the touch and lightly browned, stirring occasionally, approximately 40 to 50 minutes.
Turn oven off and leave the granola in the oven until cooled completely. Enjoy!
