Celery Salad with Lemon Dijon Dressing
Ingredients
- 1 bunch celery thinly sliced with the leaves included
- 1 tbsp parsley leaves roughly chopped
- 1 tsp lemon zest + 4 tsp lemon juice
- 1 tsp dijon mustard
- ¼ cup olive oil
- Pinch of salt and pepper
- Nutritional yeast flakes optional
Instructions
- Whisk together the lemon zest, lemon juice, mustard, oil, salt, and pepper.
- Toss the celery and parsley leaves with dressing.
- Top with a sprinkle of nutritional yeast if desired.
