Kale Quinoa Salad
INGREDIENTS
- 1 cup quinoa
- 1 bunch kale
- ½ cup dried cranberries
- ½ cup walnuts
- ½ cup goat cheese
Honey Dijon Dressing:
- ½ cup olive (avocado or canola oil)
- ½ cup apple cider vinegar
- 1 tablespoon honey or agave
- 1 tablespoon dijon mustard
- ½ teaspoon of salt
- ½ teaspoon of pepper
DIRECTIONS
- Prepare quinoa according to package directions, and let cool before adding to salad.
- Make the honey dijon dressing by whisking together ingredients.
- Wash kale, remove, stems, and chop. Add a small portion of the dressing and massage the kale for 5 minutes.
- Add the dried cranberries, walnuts, and goat cheese. Add the remaining dressing and cooled quinoa and enjoy!
