Baked Crispy Kale Chips
Ingredients
- 1 bunch curly kale
- 2 tbsp olive oil
- 1/4 tsp salt
Optional Cheeze Sauce:
- 1 red, yellow, or orange bell pepper
- 1/2 cup sunflower seeds
- 1/3 cup nutritional yeast
- 2 tsp lemon juice
- Pinch of paprika
- ½ cup water
Instructions
- Preheat oven to 300 degrees. Chop or rip kale into tortilla chip size pieces. Drizzle with olive oil and salt and massage with your hands until kale darkens in color and softens. Spread into single layer on baking sheet. Bake for ~30 minutes, turning occasionally, until crispy.
- If making cheeze sauce: Coarsely chop bell pepper, removing stem and seeds. Add pepper and all other ingredients to a blender and blend on high until smooth. Add water as needed until the mixture is the consistency of pancake batter. Pour over massaged kale and stir to coat. Bake at 300 degrees for 45 – 60 minutes, turning occasionally, until crisp.
