Ali’s Veggie Sweet Potato Chili: May You Sprinkle Love Into Everything You Do <3
Ingredients
- 1 medium onion, diced
- 1 small red or green pepper, diced
- 2 cups sweet potatoes, diced
- 1 tablespoon coconut oil or veggie broth
- 1 can diced tomatoes
- 1 can tomato sauce
- ½ jar chunky salsa
- 2-3 teaspoon ground cumin
- 1 tablespoon chili powder
- 2 cans black, white, navy or kidney beans, drained and rinsed
- 1 cup frozen canned or fresh corn kernels
- ¼ cup fresh cilantro, chopped fine
- Salt and pepper to taste
Optional Toppings:
- Diced avocado
- Nutritional yeast
- Fresh chopped cilantro
- Diced chili or jalapeno peppers
Instructions
- In a large pot, sauté onions and peppers in unrefined coconut oil over medium heat until slightly brown.
- Add in diced sweet potatoes and sauté for 3-5 minutes.
- Add in tomatoes, tomato sauce, salsa, spices, corn and cilantro.
- Reduce heat, cover and cook on low for 30 minutes.
- Add in beans and cook for another 5 minutes. Serve with toppings of choice.
