Ali’s Veggie Sweet Potato Chili: May You Sprinkle Love Into Everything You Do <3

Ingredients

  • 1 medium onion, diced
  • 1 small red or green pepper, diced
  • 2 cups sweet potatoes, diced
  • 1 tablespoon coconut oil or veggie broth
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • ½ jar chunky salsa
  • 2-3 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 2 cans black, white, navy or kidney beans, drained and rinsed
  • 1 cup frozen canned or fresh corn kernels
  • ¼ cup fresh cilantro, chopped fine
  • Salt and pepper to taste

Optional Toppings:

  • Diced avocado
  • Nutritional yeast
  • Fresh chopped cilantro
  • Diced chili or jalapeno peppers

Instructions

  • In a large pot, sauté onions and peppers in unrefined coconut oil over medium heat until slightly brown.
  • Add in diced sweet potatoes and sauté for 3-5 minutes.
  • Add in tomatoes, tomato sauce, salsa, spices, corn and cilantro.
  • Reduce heat, cover and cook on low for 30 minutes.
  • Add in beans and cook for another 5 minutes. Serve with toppings of choice.
