Asian Citrus Slaw

INGREDIENTS
- ½ head cabbage, chopped
- 1 cucumber, diced
- 2 carrots, shredded
- ½ cup cilantro, roughly chopped
Dressing:
- Juice of 2 oranges
- Juice of 2 lemons
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated(or sub 1 teaspoon of powdered ginger)
- 2 tablespoons miso paste (white or yellow miso works well)
- 2 tablespoons olive oil
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Optional: 1 teaspoon honey for more sweetness
INSTRUCTIONS
- Prepare the vegetables: In a large bowl, combine the chopped cabbage, diced cucumber, shredded carrots, and chopped cilantro.
- Make the dressing: In a small bowl or jar, whisk together the orange juice, lemon juice, garlic, ginger, miso paste, olive oil, and sesame oil until well combined. Season with salt and pepper to taste.
- Combine: Pour the dressing over the vegetables and toss well to coat everything evenly.
- Let it marinate (optional): For the best flavor, let the slaw sit for 10–15 minutes before serving to allow the flavors to meld.
