Asian Citrus Slaw

INGREDIENTS 

  • ½ head cabbage, chopped
  • 1 cucumber, diced
  • 2 carrots, shredded
  • ½ cup cilantro, roughly chopped

Dressing:

  • Juice of 2 oranges
  • Juice of 2 lemons
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated(or sub 1 teaspoon of powdered ginger)
  • 2 tablespoons miso paste (white or yellow miso works well)
  • 2 tablespoons olive oil
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Optional: 1 teaspoon honey for more sweetness

INSTRUCTIONS

  1. Prepare the vegetables: In a large bowl, combine the chopped cabbage, diced cucumber, shredded carrots, and chopped cilantro.
  2. Make the dressing: In a small bowl or jar, whisk together the orange juice, lemon juice, garlic, ginger, miso paste, olive oil, and sesame oil until well combined. Season with salt and pepper to taste.
  3. Combine: Pour the dressing over the vegetables and toss well to coat everything evenly.
  4. Let it marinate (optional): For the best flavor, let the slaw sit for 10–15 minutes before serving to allow the flavors to meld.
  5. Serve: Enjoy chilled or at room temperature as a refreshing side dish or light meal.
