Balsamic Pecan Roasted Brussel Sprouts

INGREDIENTS

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 Tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 1/4 cup pecans, chopped
  • 1 Tablespoon balsamic vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon thyme

INSTRUCTIONS 

  1. Preheat oven to 425°F
  2. Spread the Brussels sprouts on a baking sheet and toss with olive oil, salt, pepper, and garlic powder
  3. Place cut side down and roast for 20 minutes
  4. Meanwhile, in a small bowl, whisk together the balsamic vinegar, Dijon mustard, and thyme
  5. Remove sprouts from the oven. Drizzle with balsamic mixture and stir. Add chopped pecans and return to oven
  6. Roast another 15 minutes, until cooked through. Season to taste
