Banana Curry

INGREDIENTS 

  • 1 tablespoon vegan butter
  • 1 teaspoon ground cardamom
  • ⅔ teaspoon ground cinnamon
  • ⅓ teaspoon chili powder
  • 1 teaspoon ground cumin
  • ⅓ teaspoon curry powder
  • 1 teaspoon fenugreek seed, fennel seed, or cumin seed
  • 1 teaspoon mustard seed
  • 1 teaspoon turmeric
  • 1 cup coconut cream
  • 2 bananas

Optional: Add in some chickpeas or tofu for some added protein

INSTRUCTIONS

  1. Melt butter in a pan over medium heat, then add the bananas and caramelize them until they turn a rich, golden brown. Set them aside.
  2. Next, pour the cream and spice mixture into the same pan, stirring continuously to prevent burning. Bring it to a gentle boil and let it thicken.
  3. Once the sauce reaches your desired consistency, taste and adjust the seasoning if needed.
  4. Serve the caramelized bananas over your chosen dish, drizzled with the warm, spiced sauce. Enjoy!
