Banana Pancakes
Ingredients
- 1 and ¼ cups whole wheat flour
- 2 tablespoons agave, pure maple syrup, honey, or another sugar
- 1 Tablespoon baking powder
- ¼ teaspoon salt
- 1 large ripened banana the browner, the better!
- 1 Tablespoon coconut oil + more for frying
- ¾ cup plant-based milk, soy, almond, oat, etc
- 1 teaspoon vanilla extract or another extract of choice
- OPTIONAL ADDITIONS:
- -Apple Spiced Pancakes: Chop 1 apple small, and add in 2 tablespoons of sugar.
- -Lemon Blueberry Pancakes: Add in zest of 1 lemon and 1 cup blueberries
- Have fun with other flavorings of these pancakes!
Instructions
- Sift flour into mixing bowl and add sugar, baking powder, salt. Mix.
- Mash banana in a bowl and add the coconut oil and mash together.
- Add to the mixing bowl with soy milk and vanilla. Mix. Your batter, ideally, will be fairly thick.
- Heat up a pan/skillet with a little coconut oil until hot. Add in batter for first pancake.
- Flip when ready (when pancake starts looking dry along the sides with little bubbles on top).
- Option to serve pancakes with sliced bananas, a drizzle of honey/agave, and a dash of cinnamon!
Notes
NUTRITION NUGGETS: Ripened bananas are a beautiful form of natural sweetner! They can also be a substitute for eggs and for oil!
