Ingredients

  • 1 can 15.5 oz. chickpeas
  • 2 medium chopped cooked beets
  • 2 Tbsp. fresh lemon
  • Tbsp. tahini
  • Tbsp. extra virgin olive oil
  • 1 tsp. chopped garlic

Instructions

  • Rinse and drain chickpeas.
  • Add to food processor or blender with beets, lemon juice, tahini, olive oil, and garlic.
  • Puree until smooth. Season to taste.

Makes 2 cups.
