Black Bean Breakfast Hash

INGREDIENTS

  • 1 large sweet potato, diced
  • 1 yellow or russet potato, diced
  • 1 green bell pepper, diced
  • 1 red onion, diced
  • 1 can black beans, drained and rinsed
  • 1-2 tablespoons olive oil
  • 1 teaspoon cumin 
  • ½ teaspoon chipotle powder
  • 1 teaspoon oregano
  • ½ teaspoon garlic powder 
  • Optional: Top with a squeeze of lime juice and cilantro

INSTRUCTIONS

  1. Heat olive oil in a large skillet over medium-high heat. Add the onion and bell pepper, sautéing until the onions turn translucent. Stir in the sweet potatoes, cumin, garlic, chipotle powder, salt, and pepper, tossing everything together to coat the veggies in the spices.
  2. Add in all the potatoes and continue cooking, stirring regularly, for about 10 minutes, or until the potatoes are golden brown at the edges and fork-tender.
  3. Gently fold in the black beans and cook for another minute to heat through. Taste and adjust seasoning as needed.
  4. Finish with a sprinkle of fresh cilantro and a squeeze of lime juice. Serve warm and enjoy!
