Black Bean & Corn Salad

INGREDIENTS
- 3 cups corn shucked corn
- ½ cup fresh lime juice
- ⅓ cup red onion
- ⅓ cup fresh cilantro
- 3 tablespoons rice vinegar or white vinegar
- 2 teaspoons honey or alternative sweetener
- 2 teaspoons ground cumin
- 2 teaspoons chili powder
- 1 (15 ounce) can black beans, drained and rinsed
- Lime wedges (optional)
INSTRUCTIONS
- Prepare the corn: If using fresh corn, shuck and cook as desired (boiled, grilled, or steamed). Let it cool slightly, then cut the kernels off the cob to measure 3 cups. If using frozen corn, thaw before adding.
- Make the dressing: In a large mixing bowl, whisk together the lime juice, vinegar, honey, cumin, and chili powder until well combined.
- Add the vegetables and beans: Stir in the red onion, cilantro, black beans, and corn. Toss until everything is evenly coated with the dressing.
- Adjust seasoning: Taste and add salt, pepper, or more lime juice if needed.
- Serve: Transfer to a serving bowl and garnish with lime wedges, if desired.
