Black Beans in Mole Sauce
INGREDIENTS (Makes 4 Servings)
- 1 tablespoon extra virgin olive oil
- 1 yellow onion chopped
- 3 clove garlic minced
- 1 medium bell pepper, diced
- 1 jalapeno pepper, diced (optional)
- 2 teaspoons cumin
- 2 teaspoons chili powder (optional)
- 1 teaspoon oregano
- 2 tablespoons unsweetened cocoa powder
- 1 (14 oz) can of diced tomatoes, or 3 fresh medium tomatoes
- 2 cans black beans
- 4 cups vegetables broth
- Juice of 1 lime
- Salt and pepper to taste
INSTRUCTIONS
- Saute the vegetables: Heat olive oil in a large pot. Add onion, garlic, and bell pepper. Cook for 5 – 7 minutes, stirring occasionally, until softened.
- Add Spices: Stir in cumin, chili powder, and cocoa powder. Cook for 1 minute until aromatic.
- Incorporate tomatoes and beans: Add diced tomatoes with their juice, black beans, and vegetable broth. Stir to combine and bring the soup to a gentle boil.
- Simmer the soup: Reduce heat to low and let the soup simmer uncovered for 20 – 30 minutes, stir occasionally
- Blend (Optional): For a creamier texture, blend a portion of the soup. Stir back into the pot, leaving some beans whole for texture.
- Finish with lime: Stir in lime juice and adjust seasoning with salt and pepper.
