Bok Choy Miso Soup

INGREDIENTS

  • 1 tablespoon toasted sesame oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups water
  • 2 tablespoons miso paste
  • 3 cubes plant-based bouillon
  • 2 teaspoons fresh ginger, grated
  • 1 tablespoon garlic powder
  • ½ teaspoon sugar, optional
  • 3 large bok choy (or 6 small), sliced in half or roughly chopped
  • 1 (14-ounce) block tofu, cubed
  • 2 tablespoons soy sauce (for marinating tofu), you can sub edamame if you’d like!
  • 1 package noodles (ramen, udon, etc.), cooked
  • ¼ cup green onions, sliced, optional
  • 1 teaspoon red pepper flakes, for garnish, optional

INSTRUCTIONS

  1. In a small bowl, combine the cubed tofu with 2 tablespoons of soy sauce. Let it marinate for 10–15 minutes while you prepare the other ingredients.
  2. Heat a non-stick skillet over medium-high heat. Add a small amount of sesame oil and sear the marinated tofu cubes until golden and crispy on all sides, about 5–7 minutes. Remove from heat and set aside.
  3. In a medium-sized pot, heat the toasted sesame oil over medium heat. Once hot, add the diced onion and cook until browned, about 3 minutes. Add the minced garlic and sauté for 30 seconds.
  4. Pour in the water and incorporate the miso paste and bouillon, stirring until fully dissolved.
  5. Add the grated ginger, garlic powder, and sugar. Allow the broth to boil over medium heat for 5 minutes.
  6. Add the chopped bok choy to the pot and let it cook for roughly 3 minutes, or until tender.
  7. To serve, ladle the soup into bowls and top with cooked noodles, seared tofu, sliced green onion, and red pepper flakes, if desired.
