Bounty & Soul Cobbler

*TIP* The juicier and more ripened the fruit is, the sweeter and better! So save those over ripened stone fruits at a market or in home for a delicious cobbler!

Ingredients

  • 4 cups chopped stone fruit peaches, nectarines, plums, cherries…
  • 2 cups rolled oats
  • 2 T softened coconut oil
  • ¼ cup tahini
  • 1 teaspoon vanilla
  • 1 tablespoon lemon juice and lemon zest
  • Optional: cinnamon and nutmeg to taste see note below
  • Pinch of salt

Instructions

  • Preheat oven to 375.
  • Peel the skin off all stone fruit and snack on the skins while cooking or leave them on for some extra fiber and nutrients.
  • Place stone fruit into a oven safe baking pan.
  • Mix oats, tahini, vanilla, lemon juice and salt together. Spice with various optional herbs for desired taste. Layer on top of stone fruit. Add zest of a lemon to the top!
  • Bake for approximately 35 minutes or until oats become golden brown.

Notes

Get creative by adding herbs such as thyme, lemon balm, or basil which will pair well with this dish or get creative and try something new to see if you like it.
