INGREDIENTS
For the Salad:
- 1 bunch dino kale or regular kale
- 1 pint strawberries, diced
- 1 tablespoon olive oil
- 2 cups walnuts
- ⅓ – ½ cup maple syrup
- Salt to taste
Blueberry Vinaigrette:
- ½ pint blueberries
- 1 medium apple, diced
- ½ small shallot, diced
- ¼ cup honey
- ½ cup apple cider vinegar
- ½ cup avocado oil
INSTRUCTIONS
- Prepare the Kale: Cut kale into bite-sized pieces and combine in a bowl with salt and olive oil. Massage and let sit for at least 30 minutes or until tender.
- Caramelize the Walnuts: Heat walnuts, maple syrup, and salt in a saucepan on medium, stirring constantly. When sticky, transfer to a sheet pan and let cool.
- Make the Dressing: Blend blueberries, apple, and shallot until smooth. Add vinegar and honey, blend again. Slowly add oil while blending until emulsified.
