Brain Healthy Summer Salad with Blueberry Vinaigrette

INGREDIENTS

For the Salad:

  • 1 bunch dino kale or regular kale
  • 1 pint strawberries, diced
  • 1 tablespoon olive oil
  • 2 cups walnuts
  • ⅓ – ½ cup maple syrup
  • Salt to taste

Blueberry Vinaigrette: 

  • ½ pint blueberries
  • 1 medium apple, diced
  • ½ small shallot, diced
  • ¼ cup honey 
  • ½ cup apple cider vinegar
  • ½ cup avocado oil

INSTRUCTIONS

  1. Prepare the Kale: Cut kale into bite-sized pieces and combine in a bowl with salt and olive oil. Massage and let sit for at least 30 minutes or until tender.
  2. Caramelize the Walnuts: Heat walnuts, maple syrup, and salt in a saucepan on medium, stirring constantly. When sticky, transfer to a sheet pan and let cool.
  3. Make the Dressing: Blend blueberries, apple, and shallot until smooth. Add vinegar and honey, blend again. Slowly add oil while blending until emulsified.
  4. Assemble the Salad: Toss the kale with the dressing. Top the salad with strawberries and caramelized walnuts. Enjoy!
