Broccoli & Apple Salad
INGREDIENTS
- 4 cups broccoli cut up and shredded
- 3 apples of choice, diced
- ¼ cup red onion, diced
- ½ cup raisins
- ½ cup sunflower seeds, shelled
For the Dressing:
- ¼ cup apple cider vinegar
- ½ cup extra virgin olive oil
- 2 cloves garlic minced
- 1 tablespoon maple syrup you could use up to 2 tablespoons
- ½ teaspoon salt
- ¼ teaspoon black pepper
INSTRUCTIONS
- Wash and chop the broccoli into small bite-sized pieces (you can also shred some of the stems). Dice the apples and finely chop the red onion.
- In a large bowl, combine the broccoli, apples, red onion, raisins, and sunflower seeds.
- In a small bowl or jar, whisk together the apple cider vinegar, olive oil, minced garlic, maple syrup, salt, and black pepper.
- Pour the dressing over the salad and toss well to combine.
- Let the salad sit for about 10–15 minutes before serving to allow the flavors to blend. Toss once more and enjoy.
