Cabbage Farro Salad

INGREDIENTS
For Dressing:
- 1 cup parsley leaves and stems
- 1 cup dill and stems
- ½ cup tahini
- ¼ cup olive oil
- ¼ cup water
- 2 tablespoons sweetener(I used blue agave)
- 2 garlic cloves
- 1 jalapeno, stemmed and seeded
For the Salad
- 2 lbs broccoli, cut into 1 inch florets
- 2 tablespoons olive oil
- 2 cups dried farro
- 1 head of small cabbage, finely chopped
INSTRUCTIONS
- Preheat oven to 450. Bring a large pot of salted water to a boil. Add in farro and simmer for 30 minutes then drain. Set aside to cool.
- Toss broccoli in olive oil, salt and pepper. Roast for 20-25 minutes.
- Make the dressing. Place all ingredients into a blender and blend until smooth.
- Time to assemble! Make sure all ingredients are cooled before assembling. Place broccoli, cabbage, and farro into a large bowl. Pour the dressing over the salad, give a good mix and serve!
