Cabbage Farro Salad

INGREDIENTS

For Dressing:

  • 1 cup parsley leaves and stems
  • 1 cup dill and stems
  • ½ cup tahini
  • ¼ cup olive oil
  • ¼ cup water
  • 2 tablespoons sweetener(I used blue agave)
  • 2 garlic cloves
  • 1 jalapeno, stemmed and seeded

For the Salad

  • 2 lbs broccoli, cut into 1 inch florets
  • 2 tablespoons olive oil
  • 2 cups dried farro
  • 1 head of small cabbage, finely chopped

INSTRUCTIONS 

  1. Preheat oven to 450. Bring a large pot of salted water to a boil. Add in farro and simmer for 30 minutes then drain. Set aside to cool. 
  2. Toss broccoli in olive oil, salt and pepper. Roast for 20-25 minutes. 
  3. Make the dressing. Place all ingredients into a blender and blend until smooth.
  4. Time to assemble! Make sure all ingredients are cooled before assembling. Place broccoli, cabbage, and farro into a large bowl. Pour the dressing over the salad, give a good mix and serve!
