Green Goddess Salad

INGREDIENTS

For Salad: 

  • 1  cucumber
  • ½ green cabbage
  • 1 bunch green onions

For Dressing: 

  • 1 cup basil or parsley
  • 1 cup spinach
  • 1-2 cloves garlic
  • 3 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 2 tablespoons nutritional yeast
  • 1 lemon, juiced
  • A handful of cashews
  • A little water to thin

INSTRUCTIONS

  1. Finely dice all salad ingredients and place them in a large bowl.
  2. Place all dressing ingredients in a high speed blender and blend until smooth. Add water to thin until you reach your desired consistency. Add more salt to taste. 
  3. Pour dressing onto the salad and give a good mix! You want the salad to be pretty saucey. Once well combined, serve alone or with pita chips. Enjoy!
