Chocolate Mousse

INGREDIENTS
- 1/4 cup pure maple syrup or other natural sweetener
- ½ teaspoon vanilla extract
- ¼ cup mashed avocado (about 1-2 avocados)
- 6 tablespoons cacao powder or unsweetened cocoa powder
- ¼ cup unsweetened nut milk
Optional toppings: Berries, shredded coconut, almonds, granola
INSTRUCTIONS
- Add maple syrup and vanilla extract to blender.
- Add mashed avocado and cocoa powder and process until creamy, stopping to scrape down the sides of the bowl with a spatula if needed.
- Add the nut milk and process until smooth.
- Serve at room temperature or chilled. Store in a sealed container in the refrigerator up to 3 days or in the freezer up to 2 weeks.
- Top with shredded coconut, berries, granola
