Cilantro Pesto

INGREDIENTS
- 3 cups cilantro
- ½ cup almonds(or sub your favorite nut), toasted
- 2 cloves garlic
- 1 lime or lemon, juiced
- ½ cup olive or avocado oil
Optional: Add a jalapeño for a kick!
INSTRUCTIONS
- Blend the Ingredients: In a food processor, combine the cilantro, toasted almonds, garlic, and lime juice. Pulse until finely chopped.
- Add the Oil: With the processor running, slowly drizzle in the olive or avocado oil until the mixture becomes smooth and well combined.
- Season to Taste: Add salt and pepper as needed, then pulse a few more times to mix.
- Serve & Store: Use immediately or store in an airtight container in the refrigerator for up to a week. Enjoy as a sauce, dip, or spread!
