Citrus Herb Braised Fennel

INGREDIENTS
Citrus and Garlic Herb Sauce:
- 1 cup fresh orange juice from 1-2 oranges
- ¼ cup fresh lime or lemon juice from 2-3 limes or 1-2 lemons
- 1 tablespoon white vinegar
- 5 garlic cloves, minced
- 1 tablespoon fresh parsley, minced
- ½ teaspoon ground cumin
- ¼ teaspoon salt
Braised Fennel:
- 2 large fennel bulbs with fronds
- 5 tablespoon olive oil
- ¼ cup parsley leaves, roughly leaves
- Salt & pepper
- 1 tablespoon orange zest
INSTRUCTIONS
- Remove the tops from the fennel bulbs and set aside the fronds for garnish. Trim the bottoms and quarter the bulbs through the core, leaving some core intact.
- In a large skillet, heat olive oil over medium-high heat. When the oil shimmers, add the fennel quarters, cut-side down. Cook, turning occasionally, until golden brown on all sides, about 20 minutes.
- While the fennel cooks, whisk together the sauce ingredients in a small bowl.
- Reduce the heat to medium-low and pour the sauce into the skillet, bringing it to a simmer. Baste and flip the fennel every few minutes until tender, about 10 minutes.
- Transfer the fennel and sauce to a serving dish. Garnish with parsley, black pepper, orange zest, and reserved fennel fronds. Drizzle with extra-virgin olive oil, sprinkle with salt, and serve warm.
