Citrus Herb Braised Fennel

INGREDIENTS

Citrus and Garlic Herb Sauce:

  • 1 cup fresh orange juice from 1-2 oranges
  • ¼ cup fresh lime or lemon juice from 2-3 limes or 1-2 lemons
  • 1 tablespoon white vinegar
  • 5 garlic cloves, minced
  • 1 tablespoon fresh parsley, minced
  • ½ teaspoon ground cumin
  • ¼ teaspoon salt

Braised Fennel:

  • 2 large fennel bulbs with fronds
  • 5 tablespoon olive oil
  • ¼ cup parsley leaves, roughly leaves
  • Salt & pepper
  • 1 tablespoon orange zest

INSTRUCTIONS

  1. Remove the tops from the fennel bulbs and set aside the fronds for garnish. Trim the bottoms and quarter the bulbs through the core, leaving some core intact.
  2. In a large skillet, heat olive oil over medium-high heat. When the oil shimmers, add the fennel quarters, cut-side down. Cook, turning occasionally, until golden brown on all sides, about 20 minutes.
  3. While the fennel cooks, whisk together the sauce ingredients in a small bowl.
  4. Reduce the heat to medium-low and pour the sauce into the skillet, bringing it to a simmer. Baste and flip the fennel every few minutes until tender, about 10 minutes.
  5. Transfer the fennel and sauce to a serving dish. Garnish with parsley, black pepper, orange zest, and reserved fennel fronds. Drizzle with extra-virgin olive oil, sprinkle with salt, and serve warm.
