Citrus Holiday Salad

INGREDIENTS

  • 1 bunch kale, de stemmed and chopped (feel free to sub mixed greens if desired)
  • 1 cup farro uncooked (or sub your favorite grain)
  • 2 oranges, cut into sections
  • 4 ounces shelled, roasted and salted pistachios (or sub favorite nut)
  • 4 ounces or ½  cup pomegranate seeds
  • Optional: top with goat cheese

Dressing:

  • 5 tablespoons fresh-squeezed orange juice (from about half a large navel orange)
  • 3 teaspoons honey
  • 2 tablespoons white wine vinegar
  • 1  tablespoon avocado oil
  • 1 teaspoon smooth Dijon mustard
  • Salt and pepper to taste

INSTRUCTIONS

  1. Prepare the Farro: Cook the farro according to package instructions, then set it aside to cool slightly.
  2. Prepare the Salad Ingredients: While the farro is cooking, de-stem and chop the kale. Cut the oranges into sections and set aside. Drain the pomegranate arils, if needed, and set them aside along with the pomegranate seeds.
  3. Make the Dressing: In a small bowl, whisk together the fresh-squeezed orange juice, honey, vinegar, avocado oil, Dijon mustard, salt, and pepper until well combined.
  4. Assemble the Salad: In a large bowl, combine the kale, cooked farro, orange sections, pomegranate seeds, pistachios, and pomegranate arils.
  5. Dress the Salad: Drizzle the dressing over the salad and toss everything together gently.
  6. Optional: If desired, top with crumbled goat cheese for added creaminess and flavor.
