Crackling Okra Tacos
Ingredients
- 1 tablespoon unrefined coconut or olive oil
- 1/2 teaspoon cumin seeds or ground cumin
- 1/2 teaspoon turmeric powder
- 1/2 large yellow or red onion, roughly chopped
- 1 large yellow or red bell pepper, roughly chopped
- 1 1/2-inch piece ginger, peeled and grated or minced
- 2 cloves garlic, peeled and grated or minced
- 3 cups okra, washed, dried, and trimmed and cut into 1/4-inch rounds
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoons coarse sea salt
- 1/2 tablespoon chopped fresh cilantro, for garnish
- Optional: rice, corn tortillas, or naan bread
Instructions
- In a deep pan, heat the oil over medium-high heat. Add the cumin and turmeric. Cook until the seeds sizzle, about 40 seconds.
- Add the onion and cook until browned, 2 to 3 minutes.
- Add the bell pepper, ginger and garlic. Cook another minute, stirring.
- Add the okra and cook for 2 minutes
- Add the cayenne pepper and salt. Cook for 2 minutes, stirring occasionally.
- Reduce the heat to low and partially cover the pan. Cook for 7 minutes, stirring occasionally.
- Turn the heat off and cover the pan completely. Let it sit for 2 to 3 minutes to allow all the flavors to be absorbed.
- Garnish with cilantro and serve with rice, corn tortillas, or naan.
