Creamy Asparagus Soup
Ingredients
- 1 bunch of asparagus
- 1 cup potato rough chopped or sweet potato
- 1 onion small rough chopped
- 2 cloves garlic
- 1/2 can coconut milk
- 1 cup veggie broth
- 2 tablespoons tamari
- Salt & Pepper to taste
- Garnish: Scallions hot sauce, chili flakes, lemon
- Make it a Meal:: toasted whole wheat bread lentils, brown rice, or quinoa
Instructions
- Preheat oven to 400 degrees F.
- Roast onion, asparagus, garlic clove, and potato for 15-20 minutes. Add ingredients to a blender and pulse or puree.
- Add veggie broth and coconut broth as desired. Add to a stove top pot to keep warm.
- Add tamari and salt & pepper to taste. Add option lemon, hot sauce, or scallions to garnish.
