Creamy Carrot Mac N Cheese Fake-Out
Ingredients
- Carrot Sauce
- 2 tbsp. olive oil
- 1 lb carrots with leafy tops peeled and cut into ½ inch pieces (save the tops for the drizzle below)
- Salt and pepper to taste
- 1 tsp ground turmeric
- 1 tsp cayenne pepper red sauce
- 1 tsp coriander
- 1 tsp dried mustard
- 3 cloves garlic crushed
- 1 tsp orange and 1 tsp lemon zest
- 1 cup vegetable stock
- Carrot Top Drizzle
- 1 cup leafy carrot tops
- Handful of mint leaves
- 2 tbsp lemon juice
- 1 clove garlic crushed
- ¼ cup olive oil
Instructions
- CARROT SAUCE: In large skillet with a lid heat the oil, add carrots and spices. Cover and cook until the carrots are crisp tender, about 5 minutes.Stir in the garlic and zests, add to stock and simmer, covered, until the carrots are tender, about 5 minutes. Transfer to a blender and puree mixture until creamy.
- CARROT TOP DRIZZLE: : In a food processor mix all ingredients. To finish: Cook 1 lb pasta until al dente (not fully softened), scoop out ¾ cup pasta water. Drain pasta and stir into carrot sauce, adding pasta water as needed for creaminess. Top pasta with the drizzle.
