Creamy Carrot Soup

INGREDIENTS
- 2 pounds carrots, peeled and chopped
- 3 tablespoons extra-virgin olive oil, divided
- ¾ teaspoon fine sea salt, divided (adjust to taste)
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced or pressed
- ½ teaspoon ground coriander
- ¼ teaspoon ground cumin
- 4 cups vegetable broth
- 2 cups water
- 1-2 tablespoons olive oil or vegan butter (optional, for creaminess)
- 1 ½ teaspoons lemon juice (adjust to taste)
- Freshly ground black pepper, to taste

INSTRUCTIONS
- Preheat the oven to 400°F (200°C). Place the chopped carrots on a baking sheet and toss with 1 tablespoon of olive oil and a pinch of salt. Roast for 25-30 minutes, stirring halfway, until the carrots are tender and slightly caramelized.
- In a large pot, heat the remaining 2 tablespoons of olive oil over medium heat. Add the chopped onion and cook for 5-7 minutes, stirring occasionally, until softened. Add the garlic, coriander, and cumin, and cook for another 1 minute until fragrant.
- Add the roasted carrots, vegetable broth, and water to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes to allow the flavors to meld.
- Remove the pot from heat. Use a blender to puree the soup until smooth. Return the soup to the pot.
- Stir in the extra oil (if using) and lemon juice. Add salt and freshly ground black pepper to taste. Simmer for another 2-3 minutes to combine the flavors.
- Ladle the soup into bowls and garnish with a drizzle of olive oil, freshly ground black pepper, or fresh herbs like parsley or cilantro, if desired.
