Creamy Carrot Soup

INGREDIENTS

  • 2 pounds carrots, peeled and chopped
  • 3 tablespoons extra-virgin olive oil, divided
  • ¾ teaspoon fine sea salt, divided (adjust to taste)
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced or pressed
  • ½ teaspoon ground coriander
  • ¼ teaspoon ground cumin
  • 4 cups vegetable broth
  • 2 cups water
  • 1-2 tablespoons olive oil or vegan butter (optional, for creaminess)
  • 1 ½ teaspoons lemon juice (adjust to taste)
  • Freshly ground black pepper, to taste

INSTRUCTIONS

  1. Preheat the oven to 400°F (200°C). Place the chopped carrots on a baking sheet and toss with 1 tablespoon of olive oil and a pinch of salt. Roast for 25-30 minutes, stirring halfway, until the carrots are tender and slightly caramelized.
  2. In a large pot, heat the remaining 2 tablespoons of olive oil over medium heat. Add the chopped onion and cook for 5-7 minutes, stirring occasionally, until softened. Add the garlic, coriander, and cumin, and cook for another 1 minute until fragrant.
  3. Add the roasted carrots, vegetable broth, and water to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes to allow the flavors to meld.
  4. Remove the pot from heat. Use a blender to puree the soup until smooth. Return the soup to the pot.
  5. Stir in the extra oil (if using) and lemon juice. Add salt and freshly ground black pepper to taste. Simmer for another 2-3 minutes to combine the flavors.
  6. Ladle the soup into bowls and garnish with a drizzle of olive oil, freshly ground black pepper, or fresh herbs like parsley or cilantro, if desired.
