Creamy Herb Dip

INGREDIENTS 

  • ½ cup plain, unsweetened plant-based milk
  • 2 Tablespoons fresh lemon juice
  • ¾ teaspoon sea salt
  • 2 cloves garlic
  • 1 cup avocado oil
  • ¼ cup fresh dill
  • ¼ cup fresh chives
  • 3-4 Tablespoons balsamic vinegar (can sub other vinegars to taste)

INSTRUCTIONS

  1. In a tall, wide-mouthed jar, combine the plant-based milk, lemon juice, salt, and garlic.
  2. Using a handheld (immersion) blender, begin pulsing the mixture while slowly drizzling in the oil.
  3. Continue blending, moving the blender up and down, until the mixture thickens into a smooth, creamy mayonnaise.
  4. Roughly chop the dill and chives, then add them to the mayo. Blend until the herbs are fully incorporated.
  5. Add vinegar and blend again, adjusting with a splash of water or extra lemon juice as needed to reach your desired consistency.
