Creamy Potato & Kale Soup

Total time: 60 mins, Servings: 6

INGREDIENTS

  • 2 Tablespoons extra virgin olive oil
  • 1 small onion, diced
  • 6 cloves garlic, chopped
  • ½ Tablespoon thyme
  • ½ Tablespoon rosemary
  • ½ Tablespoon sage
  • 1 can cannellini beans (15oz)
  • 16 oz vegetable broth
  • 16 oz non-dairy milk 
  • 4 cups potatoes, diced
  • Salt and pepper, to taste
  • 4 cups kale, chopped

INSTRUCTIONS

  1. Heat the oil in a large pot over medium-high heat
  2. Add onion and garlic and cook about 5 minutes
  3. Next, add the beans and broth, then blend the soup with a blender (or immersion blender) until creamy
  4. Toss the potatoes into the blended soup 
  5. Bring to a boil, then reduce the heat and let simmer for about 30 minutes, or until potatoes are tender
  6. Add kale to the pot and simmer until wilted
  7. Season with salt and pepper, enjoy!
