Creamy Vegan Pumpkin Soup

INGREDIENTS 

  • 1 tablespoon olive oil (or coconut oil)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger (optional but lovely)
  • 2 cups pumpkin purée (fresh or canned)
  • 2½ cups vegetable broth
  • ½ cup coconut milk (from a can — full-fat for creaminess)
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ½ teaspoon curry powder or ¼ teaspoon ground cinnamon + pinch of nutmeg (depending on your flavor vibe)
  • Juice of ½ lime or lemon (to brighten at the end)

Optional toppings: toasted pumpkin seeds, drizzle of coconut milk, chopped cilantro, or chili flakes

INSTRUCTIONS

  1. Sauté aromatics: In a pot over medium heat, add olive oil. Sauté onion until soft and translucent (about 5 minutes). Add garlic and ginger, cooking another 1–2 minutes until fragrant.
  2. Add pumpkin and spices: Stir in pumpkin purée, curry powder (or other spices), salt, and pepper. Mix well to combine.
  3. Add broth and simmer: Pour in vegetable broth. Bring to a gentle boil, then reduce heat and simmer for 10–15 minutes, stirring occasionally.
  4. Blend (optional but creamy): Use an immersion blender directly in the pot, or carefully transfer to a blender in batches. Blend until smooth.
  5. Stir in coconut milk: Return soup to low heat. Stir in coconut milk and a squeeze of lime or lemon juice. Warm through — don’t boil.
  6. Taste & serve: Adjust seasoning with more salt, pepper, or lime juice. Garnish as you like!
